Turkey and Black Bean Enchiladas

Here is a delicious enchilada recipe we love from SkinnyTaste.com. It is healthier than your typical enhiladas, and super spicy, too! We've made a few changes from the original.

Ingredients:

Sauce
  • 2 tsp minced garlic
  • 1 tbsp adobo sauce (from chipotle chiles in adobo sauce, usually in a can in the International food aisle)
  • 1-1/2 cups tomato sauce
  • 1/2 tsp chipotle chili powder
  • 1/2 tsp ground cumin
  • 3/4 cup fat-free chicken broth
  • salt and pepper to taste

Filling

  • 1 lb lean ground turkey
  • 1 (15.5-oz) can black beans, drained
  • 1 (14.5-oz) can crushed tomatoes
  • 2 tsp minced garlic
  • 1/4 cup chopped onion
  • 1/4 cup chopped cilantro
  • 2 tsp cumin
  • 1/4 tsp chipotle chili powder (hotter/smokier than regular chili powder)
  • salt and pepper to taste
  • 8 (6-inch) whole-wheat flour tortillas
  • 1 cup shredded sharp cheddar
  • cooking spray

Directions:

  1. Preheat oven to 400 degrees. Spray a 9x13" glass baking dish with cooking spray. 
  2. Sauce: Spray a medium saucepan with cooking spray and sauté garlic. Add adobo sauce, chili powder, cumin, chicken broth, tomato sauce, salt and pepper. Bring to a boil. Reduce the heat to low and simmer for 5-10 minutes. Set aside until ready to use.
  3. Filling: In a large skillet, brown the turkey and season with salt and pepper. 
  4. Add onion, garlic, black beans, cilantro, crushed tomatoes, cumin, and chili powder. Mix well, cover, and simmer on low for 20 minutes. 
  5. Remove lid and simmer an additional 5-10 minutes to reduce the liquid.
  6. Put 1/2 cup turkey mixture into each tortilla and roll it. Place on baking dish seam side down. 
  7. Top with enchilada sauce and cheese.
  8. Cover with aluminum foil and bake in the oven on the middle rack for 20-25 minutes. 
  9. Serve with a side of rice; top with low-fat sour cream and green onion if desired. Makes approx. 8 enchiladas.
