Fontinella-Mozzarella Pizza

It's pizza night! Here is a great combination of recipes for homemade pizza with a garlic-basil crust (okay, I cheated and used my bread machine), a delicious sauce, and a yummy combination of cheeses on top.





Ingredients:
Dough - for bread machine

  • 1 cup flat beer (I used Moosehead Lager)
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Pinch dried rosemary
  • 2 1/4 teaspoons yeast (1 packet)
Sauce

  • 12 oz tomato paste
  • 1-1/2 cup warm water 
  • 3/4 cup grated Parmesan cheese
  • 2 teaspoons minced garlic
  • 2 tablespoons honey
  • 1-1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried marjoram
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon dried red pepper flakes (optional)
  • salt to taste (I used 1 teaspoon Nature's Seasons)
Toppings
  • Fresh mozzarella cheese, shredded
  • Fresh fontinella cheese, shredded
  • Whatever you like best! (we went with half pepperoni this time)

Directions:
  1. Whisk tomato paste and water together in a large mixing bowl.
  2. Add rest of ingredients and whisk until smooth.
     
  3. Refrigerate until needed.
  4. Meanwhile, add beer, butter, sugar, salt, flour, seasonings, and yeast to bread machine in the order recommended by the manufacturer.
  5. Select Dough setting, and press Start. Remove dough from bread machine when cycle is complete. 
  6. Preheat oven to 400 degrees F.
  7. Roll or press dough to cover a prepared pizza pan. Brush lightly with olive oil. Cover and let stand 15 minutes.
  8. Prebake crust in preheated oven for about 5 minutes, or until it just begins to brown.
  9. Remove from oven and spread sauce and fresh shredded cheeses on top; add other toppings as desired.
     
  10. Bake until outer crust is crisp and golden and cheese is bubbly. Enjoy!
